Vattayappam is a delicious steamed rice cake made with soaked rice, coconut, cooked rice, salt, sugar and yeast. The batter is allowed to ferment before pouring in small shallow moulds and steamed. This is popular in and around Kerala and served specially during Christmas or Easter.
Consuming appam can remain satisfied and energetic for a long time. Thus, we avoid unnecessary food. This will not make you hungry again and will also help in losing weight. At the same time, most of the items from this dish are also low in calories, making an excellent snack for those who want to lose weight.
If you use too much of boiled rice, the appams will become sticky. If the rice used is less, appams won't be soft. Try using 1/2 to 3/4 cup of cooked rice but not more than that. While grinding the rice, try adding very little water.
It has a shelf life of 3 months and once opened store in an air tight container.
