Hara bhara kabab are North Indian vegetarian kabab made with plenty of leafy greens and veggies like spinach, coriander leaves, green peas, potatoes and Indian spices. These amazingly delicious kababs are popular in the Indian restaurants.
Some of my favorites for kabobs are: bell peppers (any color), zucchini, yellow squash, mushrooms, onions (I like red onions, but yellow onions or shallots are great too), and tomatoes (smaller cherry or grape tomatoes). I've also tried grilled brussels sprouts on skewers and loved them!

The stuffing is made with mix veggies like cauliflower, green peas, carrots, french beans, capsicum and potatoes. You can add your choice of veggies also. Other veggies that can be added are broccoli, baby corn, sauteed spinach, beetroot and cooked corn. I have also added paneer, though you can skip it if you want.
These kebabs are made with ground meat like beef, chicken, or mutton; I'm using American Lamb, which is excellent as it produces the best flavor and quality kebabs in this recipe. Unlike some other kebabs, seekh kebabs have an extra advantage.
