In this recipe, I use red, orange, and green bell peppers, red onion, and a simple fajita seasoning made from oregano, salt, and cumin. Then I cook the veggies in a cast iron skillet to get the same texture and charring that you see at Chipotle and other Mexican restaurants.

These guys are super fresh and colorful, tangy, smoky, and perfectly charred. They'd be a great addition to a burrito or bowl, but for my money, they make a great main dish too. Served alongside tortillas and fresh fixings like guac and salsa, this veggie fajita recipe is a delicious quick and easy dinner.
Fajitas can be very healthy, if done right. On its own, the chicken, peppers, and onion mixture comes in macros friendly with high protein, low carb, and low-moderate fat (depending on if using white or dark meat). The final macros comes down to you and your choices of how you put it together on the plate.
