Thattai (Tamil - தட்டை) is a deep fried snack from Tamil Nadu made with rice flour and commonly prepared during Pongal and Deepavali festival. It can be salted or sweet. It is known as Nippattu in Karnataka and Chekkalu in Andhra Pradesh/Telangana.
If the oil is not hot enough murukku will turn soft after a day or two. Place the murukku laddle in the oil or remove the murukku and slide it gently to the hot oil. Fry until golden and crisp on a medium high flame. Drain them on a kitchen tissue to remove excess oil.
Murukku is typically made from rice and Vigna mungo black gram flour. The flours are mixed with water, salt, chili powder, asafoetida and either sesame seeds or cumin seeds. The mix is kneaded into a dough, which is shaped into spiral or coil shapes either by hand or extruded using a mould.
