Kadhi or karhi is a yogurt-based dish originating from Rajasthan, india. It's made by simmering yogurt with besan (gram flour) and indian spices until it forms a thick, tangy gravy. Sometimes, it's also mixed with pakoras (deep-fried fritters).
Stirring the batter once cooking is essential as it will start to thicken almost immediately. Use a whisk or a spatula to mix going right into the cormers of the pot as well. While cooking, the Kadhi will thicken, so add water if you wish to reach your desired consistency. It may thicken as it cools too.
Serve with plain rice and of course some Aloo Tuk or papad/ pickles.
It is rich in complex carbohydrates, folate and has a low glycemic index. Chaas helps in losing weight, building your immunity and is good for your heart. So, the next time you have kadhi, have it without any hesitation as it won't make you gain weight.
