Kerala sambar is a delicious, flavorsome and tasty variation of the South Indian Sambar made with various mix vegetables, lentils, and a roasted coconut and spices paste. Makes for a healthy meal paired with some steamed rice or Idli or Dosa.
- After turning off the flame, add some fresh coconut oil or ghee to enhance the taste of sambar. - Boil tomatoes and make a pulp in the blender and add it with the boiled toor daal. This will make the sambar colourful and appetizing. - Try using organic dal, smaller and flat ones which are unpolished.
Kerala sambar has mixed vegetables. Tamizh sambar has only one or two varieties of vegetables. Kerala sambar has coconut. Tamizh sambar doesn't have coconut.
Today's Tip: To thicken watery sambhar add half a cup of prepared idli batter and bring it to a boil. The sambhar can be thickened to the required consistency by adjusting the quantity of batter. very nice! But will it taste like sambar?
Coconut milk/cream is not an essential ingredient for any curry. But it is used more to make it richer and thicker and coconut brings its own flavor. If you do not want to use coconut a good substitute would be cashew paste. Soak and grind them into a smooth paste.
