Softening the paneer prior to cooking prevents that unwanted chewy, rubbery texture. Soften it by following the cut, soak, steam, boil or pan-fry softening methods.
Make sure your pan is hot before placing the paneer. Let fry on a medium flame for 3 to 4 minutes, making sure not to burn them. If you are in doubt, simply lower the heat and fry. But make sure you don't touch them before the spice mixture at the bottom is crisp.
Also, avoid overcrowding the pan and fry the paneer in batches if needed. Lastly, handle the paneer gently while frying to avoid breaking the cubes.
Frying Paneer totally depends on your preference. I just cube the paneer and put it directly in the curry towards the end as I like the softness. Some people like a bit of crunchiness or browned parts achieved by frying or shallow frying.
