🧄 The Kofta spices. Most recipes call for a blend of cumin, coriander and cinnamon, to give that iconic Kofta flavour. * I'm also adding 1/4 tsp of chilli flakes along with the spices and seasoning to give a little kick of heat but that's completely optional.
In the simplest form, koftas consist of balls of minced meat – usually beef, chicken, pork, lamb or mutton, or a mixture – mixed with spices and sometimes other ingredients. The earliest known recipes are found in early Arab cookbooks and call for ground lamb.
Lamb mince: Traditionally koftas are made with mince that is 80:20 meat to fat, which is the equivalent to 3-star. You can also use beef mince or a combination of both. Onion: If you don't like raw onion, you could always cook it in a bit of olive oil with the garlic or alternatively, you could grate them.
Lamb beef kofta – There are variations to this recipe and sometimes people combine ground beef and ground lamb. Lamb kofta accompaniments – I like to serve this with rice, grilled lemons, hummus, a little tomato and cucumber salad and pita.
