Moth beans or Matki is a very healthy bean.It a small and oblong in shape, looks very similar to moong beans,but is brown in colour.It is a great source of protein, fiber ,Iron,calcium etc.
Vigna aconitifolia is a drought-resistant legume, commonly grown in arid and semi-arid regions of India. It is commonly called mat bean, moth bean, matki or dew bean. The pods, sprouts and protein-rich seeds of this crop are commonly consumed in India.
Moth beans are a little hard to cook, so it is strongly recommended to soak them for at least 6 hours or overnight.
