Kalan is a tasty preparation of curd or buttermilk made with vegetables like yam and raw banana or plantain. The subtly spiced Kalan Recipe from the Kerala cuisine is not just delicious, but very soothing and comforting. It is also one of the dishes that is served in the grand feast of the Onam sadya.
What is Moru Curry? Refreshing yet simple curry made with buttermilk gets a simple tempering with onions, ginger, green chillies, curry leaves and spices. Moru means buttermilk, but I like to use curd or yogurt to make this for more creamy.
The Kalan, also known as a Kalan de Uling, Ulingan, or Pugon, is a traditional earthenware stove used in the Philippines together with the Palayok to cook over fire. It is 8 inches in diameter and 8 inches tall, and can be used with charcoal or wood fed through the hole in the front and the Palayok placed on the top.
Kaalan is among the most scrumptious dishes offered in any Sadya, Kerala's very own traditional vegetarian feast. It seamlessly blends together diverse ingredients like elephant yam, bananas, yoghurt, mustard and chillies with a unique spice mix in a delightful symphony of flavours.
The word “Moru” refers to “buttermilk” in Malayalam. My mom's recipe actually calls for curd or yogurt instead of buttermilk. Sour curd is whisked in water to get a buttermilk like consistency.
