Mawa ni Boi is a delectable dessert made from mawa (or khoya) and milk, enriched with pistachios and almonds, and shaped like a fish, usually topped with a layer of silver foil. The fish holds ancient significance, symbolising fertility and renewal.
A sweet dish made out of mawa (or khoya as it's also known), shaped like a fish and then gilded in silver leaf. Mawa is usually made from sweetened dried whole milk or milk thickened over heat until it forms a dough-like consistency.
Khoya is nothing but milk solids obtained by simmering and reducing full fat milk until all the liquid evaporates. It is also known as Mawa or koa. You'll find both sweetened and unsweetened mawa in the market.
In homemade mawa, sometimes people add sugar in the last stages of reduction when there is some liquid left. Chenna, on the other hand, is the moist form of paneer or cottage cheese. Milk, usually cow milk, is boiled and then curdled with lemon juice.
