Litti is a dough ball made from whole wheat flour, stuffed with sattu (roasted gram flour) mixed with garlic, ginger, onions, coriander leaves, lime juice, carom seeds, nigella seeds, and mustard oil. Traditionally, it is cooked over a coal fire, giving it a distinct smoky flavour.
Litti chokha is usually baked, and thus has low refined oil, which makes it healthy for the heart. Litti Chokha is also rich in nutrients, vitamins and magnesium and aids metabolism. Litti chokha contains nasunin and fibre, making it act like an antioxidant. Litti Chokha is made of sattu, and keeps the body cool.
If there's one combination that is the hallmark of Bihari cuisine, it is the Litti Chokha. This is basically a very traditional and rustic dish of spiced sattu (roasted black chickpea flour) stuffed whole wheat dough balls called Litti.
While sattu is the traditional filling for litti, you can substitute it with other ingredients such as besan (gram flour), crushed roasted peanuts, or mashed lentils.
