There's not much to it, a kind of rolled-up version of a Welsh rarebit, made with evaporated milk, cheddar cheese, and onion soup mix in many of its simpler incarnations. Many recipes call for finely diced raw onion as well, or cayenne pepper, or mustard powder, or Worcestershire sauce.
A cheese roll (occasionally known by the older name of cheese roll-up) is a New Zealand snack food similar to Welsh rarebit, but created by covering a slice of bread in a prepared filling consisting mainly of grated or sliced cheese, and then rolling it into a tube shape before toasting.
The Cooper's Hill Cheese-Rolling and Wake is an annual event held on the Spring Bank Holiday at Cooper's Hill, at Brockworth near Gloucester, England. Participants race down the 200-yard (180 m) long hill chasing a wheel of Double Gloucester cheese.
Though it seems safe to assume cheese rolls were invented by members of Dunedin's vast student population after a few too many Speight's Gold Medal Ales, the history of this dish dates to the 1930s – the earliest printed recipe appearing in a Kiwi newspaper in 1935.
The rules are simple. You chase the cheese, which is given a start of a few seconds and is said to roll down the hill at about 70mph. First to the bottom – the humans apparently get up to more than 30mph – wins the cheese.
