For the batter
- 125g plain flour.
- 2 tbsp cornflour.
- 1⁄2 tsp lemon juice.
- 2 tsp natural yogurt.
- 1⁄2 tsp turmeric, or a few drops of natural yellow food colouring.
- 1 tbsp ghee.
- 1⁄4 tsp baking powder.
- 1⁄4 tsp bicarbonate of soda.
If the syrup is too hot or too cold, the jalebi will not absorb the syrup and you'll end up with soggy jalebis, which will still taste good but won't give you the crispy texture you want.
Baking soda makes Instant Jalebi possible and they are not missing any authentic flavor or texture. Mom adds besan (gram flour) to maida (all-purpose flour) which can keep Jalebi crunchy for up to 5 days!
