Here I have used baby potatoes, but you can make it with regular potatoes or even mixed veggies. Whenever I want to have a special rice-based dish then biryani is always in my mind. I have shared many veg biryani varieties on the blog.
As per food expert Kalyan Karmakar, due to the money crunch, the biryani became lighter with toning down of spices in the rice. And meat was expensive, so they decided to add potatoes instead to give contrast to the rice.
It is made with rice, some type of meat (chicken, goat, lamb, beef, prawn, or fish) and spices. To cater to vegetarians, in some cases, it is prepared by substituting vegetables or paneer for the meat. Sometimes eggs and/or potatoes are also added.
Butter, meat stock, edible fragrance, rose water, milk and kewda should be added in the biryani while layering the rice properly over the chicken. These ingredients add a delicious flavor to the biryani and give it a lovely appearance.
