Ada pradhaman is a traditional Keralan dessert made by using the rice ada (rice pasta or flakes) with a sauce of cooked coconut milk and jaggery. Ada pradhaman is specially prepared in every home of the state of Kerala,India on the festival day of Onam, it is served together with Sadya.
Decoding the difference between a payasam and pradhaman, Vidhya explains, “Payasams are usually made with milk, involving a single boiling process and are offered as part of the naivedya at temples. Pradhamans are usually made with jaggery and coconut milk, and are usually double-boiled.
Ada is made by steaming the batter of rice spread in banana leaf. Ada can be used for making Pradhaman after breaking it into pieces and could be relished as a savoury or snack with appropriate filling.
Method
- Boil pasta , and keep it aside.
- Chop spring onions , Garlic , green chilly Etc.
- In a heated pan add butter , now add Crushed garlic , Spring onion , salt . Mix it well.
- Now add pasta, then add chilli garlic sauce ( homemade) . Mix it well.
- Serve hot.
